Photo Credit: DCI Engineers<\/figcaption><\/figure>\n<p>Denver is a very charming city, and we had a great time just exploring it and walking around before heading up for our skiing experience in Vail.<\/p>\n<p>The city has a little over 680,000 people and it houses some of the most amazing\u00a019th-century buildings, museums and landscapes.<\/p>\n<p>These are a few of the places we visited:<\/p>\n<hr \/>\n<h3>True Food Kitchen<\/h3>\n\n<div class=\"vsg-map\"><iframe align=\"right\" width=\"400\" height=\"400\" frameborder=\"0\" scrolling=\"no\" marginheight=\"0\" marginwidth=\"0\" src=\"https:\/\/maps.google.com\/maps?&q=2800%20E%202nd%20Ave%20%23101%2C%20Denver%2C%20Colorado&amp;cid=&amp;t=m&amp;center=2800%20E%202nd%20Ave%20%23101%2C%20Denver%2C%20Colorado&output=embed&z=14&iwloc=A&visual_refresh=true\"><\/iframe><\/div>\n<p>For our healthy start in Denver, we went for lunch at True Food Kitchen. We do love healthy, seasonal and sustainable food, so it was the perfect place! Yes, they do have other restaurants in other cities across the U.S., but we had never gone there before. Nonetheless, they have a very good healthy menu that we really enjoyed.<\/p>\n<p>We coincidently picked the top choices on their menu, and loved them all! These were our dishes:<\/p>\n<ul>\n<li>Edamame Dumplings with a delicious white truffle oil<\/li>\n<li>A to-drool-for &#8220;Inside-out&#8221; Quinoa Burger with hummus, avocado, feta, and other great ingredients<\/li>\n<li>Winter Ingredient Salad had Brussels sprout, squash, mulberry, pomegranate<\/li>\n<\/ul>\n<p>Do ask for dessert! They are all extremely tempting, and we just couldn&#8217;t get enough. We ordered the Flourless Chocolate Cake. It&#8217;s gluten free and vegetarian, with 72% cocoa, vanilla ice cream, almond butter and caramel. We also tried the Chia Seed Pudding with banana and coconut flakes, that was fantastic!<\/p>\n<p>Last, but definitely not least, we tried the Genmaicha Green Tea with almond milk and vanilla!<\/p>\n<p>And, the best news for us, healthy New Yorkers, is that they&#8217;ll be opening a beautiful and huge 3 story place this next fall! Well, we think this way and any place with chairs, we pop opened our laptop.<\/p>\n<p>So as we were walking around and exploring Denver and we bumped into the Union Station of Denver\u00a0which was actually very interesting!<\/p>\n<p>It was built in 1881 and they have restored the place beautifully!<\/p>\n<p>We stopped there to work a bit, but we did walk around it too.<\/p>\n<p>There are some nice restaurants, bars, retail stores with handmade stuff, candles, scarves, etc!<\/p>\n<p>It also hosts the <a href=\"https:\/\/www.thecrawfordhotel.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Crawford Hotel<\/a>, so do check it out!<\/p>\n<p><a href=\"https:\/\/unionstationindenver.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">www.unionstationindenver.com<\/a><\/p>\n<hr \/>\n<h3>Bar Dough Restaurant<\/h3>\n\n<p class=\"p1\"><span class=\"s1\"><div class=\"vsg-map\"><iframe align=\"right\" width=\"400\" height=\"400\" frameborder=\"0\" scrolling=\"no\" marginheight=\"0\" marginwidth=\"0\" src=\"https:\/\/maps.google.com\/maps?&q=2227%20W%2032nd%20Ave%2C%20Denver%2C%20Colorado&amp;cid=&amp;t=m&amp;center=2227%20W%2032nd%20Ave%2C%20Denver%2C%20Colorado&output=embed&z=14&iwloc=A&visual_refresh=true\"><\/iframe><\/div><\/span><\/p>\n<p>At night, we decided to have dinner at a very trendy, relatively new restaurant named Bar Dough. It&#8217;s located in the Highlands neighborhood, today considered an upcoming, cool place to live.<\/p>\n<p>We ordered a few different dishes, since we were curious about them all, so we decided to share everything and have a taste of each.<\/p>\n<p>Our choices were: Garlic Bread &#8211;\u00a0in-house made focaccia, parmesan, parsley,\u00a0Oven Roasted Carrot &#8211;\u00a0farro, chickpeas, carrot, cumin vinaigrette, Grilled Octopus &#8211;\u00a0charred eggplant, caponata, toasted pistachio, mustard frill,\u00a0King Trumpet Mushroom &#8211;\u00a0guanciale vinaigrette, and for dessert the Fried Dough &#8211;\u00a0served w\/ lemon curd, caramel, hot chocolate sauce.<\/p>\n<p>It was all very, very good!
